I think this has to be the largest wedding I’ve ever had the pleasure to create a cake for, a whopping 800 guests at this Indian wedding at Park Plaza Westminister, London. My bride had already decided she wanted and all white wedding cake with pearls. Lots of pearls.
My bride was keen on having each tier have its own ‘personality’.
Each tier was to have it’s own design, without it looking disjointed. One obvious way was to keep the colours uniform, which was already decided. The majority of the cake was actually covered in an ivory sugarpaste with any decorations over the top in white.
The 6-tier cake featured a pomander covered in sugar hydrangeas, edible lace, royal icing piped swags, a pearl tier and a sugar monogram. The multiple tiers included lemon cake, filled with lemon Italian meringue buttercream; dark chocolate cake filled with chocolate Italian meringue buttercream and vanilla bean cake filled with vanilla Italian meringue buttercream and raspberry preserve.
